We were invited to a pool party and I thought it would be perfect to whip up this delicious summer dessert to share with everyone. It definitely sparked conversations and intrigued taste buds. Picture your friends’ faces when they take their first bite โ€“ that’s the look of awe and admiration you’ll get. And hey, you know what? Sometimes, it’s just you, your fork, and a little slice of heaven. That’s like a mini self-care session right there. You totally deserve it!

This dessert is amazingly light, super creamy, and just downright deliciousโ€”my kids couldn’t get enough of it! The strawberries not only bring a natural sweetness but also a pop of vibrant red to the dessert table. I made two versions: one without coffee and alcohol, and the other with ladyfingers soaked in amaretto. While most tiramisu recipes use raw eggs, I opted for the double boiler method to whip the egg mixture. This not only ensures safety but also eliminates any worries about potential salmonella risk.

Adding a bit of balsamic vinegar or a splash of lemon juice can boost the strawberries’ natural sweetness and flavour. It also helps with the maceration process, where the fruit softens gently, releasing its juices to create a tasty syrup. This syrup is ideal for soaking the ladyfingers, giving them a burst of flavour. The acidity from the vinegar or lemon juice can also liven up the creamy mascarpone filling, making it more vibrant and refreshing.

I love using my Staub baking dish – it’s like the perfect match made for this tiramisu. But if you’re aiming for a truly special presentation to showcase your culinary creation, think about serving it in a glass dish or individual wine glasses. They act as a window into the delicious layers of tiramisu, letting the vibrant colours and tempting textures shine through. It becomes a visual delight as much as a treat for your taste buds.

Ingredients:

๐Ÿ“ 3 cups fresh strawberries/about 500-600g (can use frozen if not in season) Keep a cup on the side to slice up and add in between layers. 
๐Ÿ“ 20g of powdered sugar
๐Ÿ“ 1 tsp lemon juice or balsamic vinegar 
๐Ÿ“ 1/2 tsp salt
๐Ÿ“ 1/2 cup sugar
๐Ÿ“ 4 egg yolks (you can use pasteurized eggs found at grocery stores)
๐Ÿ“ 4 egg whites
๐Ÿ“ 475-500g mascarpone cream (a tub)
๐Ÿ“ A pack of ladyfingers (how many you need will depend on size of dish)
๐Ÿ“ 2 tsp vanilla
๐Ÿ“ 1 cup Whipping cream (optional) if you don’t want to use raw eggs
๐Ÿ“ Amaretto (optional)

Instructions:

  1. Prepare the Strawberries:
    • Wash and hull the strawberries.
    • Slice a cup of strawberries into thin rounds and set them aside for layering.
  2. Strawberry Puree:
    • Place the remaining strawberries in a blender, sprinkle them with powdered sugar, and drizzle with lemon juice or balsamic vinegar and blend until smooth.
  3. Egg Yolk Mixture (Option 1 – Using Raw Eggs):
    • Separate eggs and in a glass bowl and whisk together the egg yolks and sugar until the mixture is pale and creamy.
    • Transfer the egg mixture into a stand up mixer and add vanilla and whisk until it’s fluffy and pale.
    • In the Thermomix, set to speed 4 for about 4-5 minutes.
  4. Egg Yolk Mixture (Option 2 – Double Boiler):
    • Separate eggs and in a glass bowl or double boiler. Over a pot of simmering water, whisk together the egg yolks and sugar until the mixture is pale and creamy.
    • Set the temperature to low while whisking the mixture until it reaches 160ยฐF.
    • Transfer the egg mixture into a stand up mixer and add vanilla and whisk until it’s fluffy and pale.
    • In the Thermomix, set to speed 4 for about 4-5 minutes.
  5. Mix egg yolk mixture with mascarpone cream:
    • Mix in the mascarpone cream with the egg yolk mixture until full incorporated.
  6. Whipped Egg Whites:
    • In another bowl, beat the egg whites until stiff peaks form.
    • If you don’t want to use raw eggs, use pasteurized eggs or whipped cream instead.
    • In the Thermomix, insert the whisk and whip for 3 minutes at speed 4.
  7. Fold Egg Whites into Mascarpone:
    • Gently fold the whipped egg whites (pasteurized eggs or whipped cream) into the mascarpone mixture until well combined.
  8. Assemble Tiramisu:
    • Dip the ladyfingers briefly (about 1-2 seconds) into the strawberry puree. Arrange a layer of dipped ladyfingers at the bottom of your serving dish.
    • Spread a layer of the mascarpone mixture over the ladyfingers.
    • Add a layer of sliced strawberries.
    • Repeat the layers until your dish is filled, finishing with a layer of mascarpone mixture on top layered with more sliced strawberries.
    • Should you find yourself with any remaining strawberry puree, it makes a lovely addition as a decorative topping for the final layer of mascarpone cream.
  9. Refrigerate:
    • Cover the tiramisu and refrigerate for at least 4 hours, preferably overnight, to allow the flavours to meld and the dessert to set.
  10. Serve and Enjoy:
    • Serve chilled and enjoy your homemade Strawberry Tiramisu!
