Miso Dressing

  • Miso Paste – 3 tbsp (Organic White Miso)
  • Rice Vinegar – 2 tablespoons
  • Apple Cider Vinegar -1 tbsp (unfiltered is best)
  • Soy Sauce – 1 tbsp (Tamari for a gluten-free option)
  • Water – 2 tablespoons
  • Neutral Oil – 2 tbsp
  • Toasted Sesame Oil – 2 tsp
  • Honey/Maple Syrup/Agave Nectar – (optional) 1 tsp or more depending your preference for sweetness
  • Garlic – 1-2 cloves (finely minced) or 1 tsp minced garlic
  • Ginger – (finely minced) or 1/2 tbsp minced ginger
  • Lime Juice – (optional) 1 tsp to add some pop to the dressing
  • Sesame Seeds – 1 tsp
  • Sriracha – (optional) If you like a bit of kick

Coleslaw

  • 150 g purple cabbage, cut into pieces
  • 100 g carrots, grated
  • 30g edamame
  • 1 red bell pepper, deseeded and diced
  • 2 spring onions/shallots, trimmed and cut into thirds
