My kids absolutely love this combination of scallops, bacon, and pea purée. We’ve made this dish numerous times, and every time, they enjoy every bite and leave no plate unfinished. Whenever we host friends and family gatherings, we bring out this recipe too. Everyone is always amazed that we can whip up something this fancy using our Thermomix. It’s like our secret weapon in the kitchen!

With this dish, you can get creative. You can either place the bacon strips right on top of the scallops or go the extra mile and wrap them up, just like we did this time. Revolutionizing Cleanup: Thermomix’s Pre-Clean Magic

The Thermomix Pre-Clean function is truly remarkable and a game-changer for anyone who appreciates convenience in the kitchen. This clever feature takes the hassle out of cleaning up after a meal. With just a few quick button presses, the Thermomix’s pre-clean function gets to work, thoroughly rinsing and scrubbing the mixing bowl and blades. It’s like waving a magic wand that makes all those annoying food bits vanish in a flash. This not only saves valuable time but also ensures that the appliance is ready for the next use without the need for extensive handwashing or soaking. The user-friendly nature and efficiency of the Thermomix Pre-Clean feature make it an essential tool for busy cooks, allowing them to focus more on the joy of cooking and less on the cleanup process. Ingredients:

  • 20g shallots, finely chopped
  • 10g unsalted butter
  • 75g whipping cream
  • 1/2 tsp sal
  • 225g frozen green peas
  • 1/2 tsp lemon juice
  • A few pieces of smoked bacon
  • 8 scallops, roe removed
  • Ground pepper to taste

Instructions for stovetop:

  1. In a medium saucepan, melt the butter over medium heat. Add the chopped shallots and sauté until they become translucent.
  2. Pour in the whipping cream and bring it to a gentle simmer. Let it simmer for about 2-3 minutes.
  3. Add the frozen green peas and salt to the saucepan. Stir well and continue to cook for another 2-3 minutes or until the peas are heated through.
  4. Transfer the pea mixture to a blender or food processor. Add the lemon juice. Blend until you achieve a smooth and creamy consistency. You can adjust the consistency by adding more cream if needed. Taste and adjust the seasoning with additional salt if desired.
  5. While preparing the pea puree, cook the smoked bacon until it’s crispy in a separate pan. Remove the bacon from the pan and place it on paper towels to drain any excess oil.
  6. In the same pan, sear the scallops over medium-high heat for about 2-3 minutes on each side or until they are nicely browned and opaque in the center. Season with ground pepper to taste.
  7. To serve, spoon the pea puree onto plates, top with the crispy bacon, and place the seared scallops on top. Garnish with a sprig of fresh herbs if desired.
  8. Enjoy your delicious bacon-wrapped scallops with creamy pea purée!

Thermomix Instructions:

  1. Place eschalots into mixing bowl and chop 4 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  2. Add butter and sauté 3 min/120°C/speed 1.
  3. Add cream, salt and 175 g of the peas, then cook 8 min/95°C/speed 1.
  4. Add remaining 50 g peas and ½ tsp lemon juice, then start Blend /1 min to a smooth purée.
  5. Scrape down sides of mixing bowl with spatula, then start Blend /30 sec.
  6. Place a frying pan over medium-high heat. Add bacon and fry until crispy (approx. 5 minutes). Transfer bacon onto a plate lined with paper towel to drain. Add scallops to frying pan and sear for 2 minutes on each side, then season with lemon juice, salt and pepper. Arrange pea purée on serving plates (see Tips), top with scallops and crispy bacon, then garnish with balsamic glaze just before serving.
