  1. Sterilizing Jars: Before filling your jars with the syrup, wash them thoroughly with hot, soapy water. Rinse them well, and then sterilize the jars and lids. You can do this by placing the jars in a large pot, covering them with water, and bringing it to a boil. Let the jars boil for about 10 minutes to kill any bacteria. Alternatively, you can also sterilize them in the oven by placing them on a baking sheet at 275°F (135°C) for 20 minutes. Ensure the jars are completely dry before filling them. If you have the Thermomix, you can sterilize the jars in the Varoma.
  2. Filling and Sealing: Carefully pour the warm Lemon Tea Syrup into the sterilized, dry jars, leaving a small space at the top. Seal the jars tightly with sterilized lids while the syrup is still hot. The heat will create a vacuum seal, enhancing the preservation process.
  3. Cooling and Labeling: Let the sealed jars cool to room temperature on a clean, dry towel. Once cooled, label each jar with the preparation date for reference.

Ingredients

  • 3-4 lemons
  • 2-2.5 cups rock sugar
  • 2-3 dried tangerine peels (decent size pieces)

Instructions

  • Wash and slice lemons and tangerines.
  • Soak the dried peels for awhile. 
  • In a pot, combine lemon slices, tangerine slices, sugar, and water.
  • Set the heat to low and let the mixture simmer for about 20-30 minutes, stirring occasionally.
  • Allow the flavours to meld and the liquid to thicken slightly.
  • Strain the syrup to remove fruit pieces, leaving a smooth liquid.
  • Let it cool before transferring to a sterilized jar.

Thermomix Instructions:

  • Wash the lemons thoroughly to remove any dirt or residue. Cut them into slices. Remove any seeds. 
  • Soak the dried peels for awhile. 
  • Place the lemon slices, 500g or rock sugar and the thin slices of tangerine peels in the bowl. 
  • Set for 75 minutes at 90 degrees on reverse stir. Remove measuring cup for the last 15-20 minutes and set to Varoma.
